Box Mix Brownie Hacks

Add chocolate chips–If the brownie mix does not include chocolate chips, add up to 1 cup (170 grams) semi-sweet or dark chocolate chips. If the mix includes chocolate, add at least 1/2 cup (85 g) chocolate chips for richer brownies.

Add nuts–Add a handful of finely chopped pecans or walnuts if you love brownies with nuts.

Add mix ins–Jazz up a basic brownie mix with chopped mini peanut butter cups, white chocolate chunks, or your favorite chopped up candy bar.

Add a swirl–Swirl in spoonfuls of peanut butter or Nutella before baking. Measure out 1/3 cup (85 grams) peanut butter or Nutella in a small bowl and microwave for 10 to 15 seconds. Dollop over the top of the brownie batter and gently swirl with a toothpick. Tap pan sharply before baking.

Add salt–Flaky salt takes basic brownies to a new level of decadence!

Add a topping–Drizzle the baked brownies with salted caramel sauce, butterscotch sauce, or top with vanilla ice cream and chocolate fudge sauce!

Don’t overbake–The key to fudgy box brownies is to bake just until set (a toothpick or tester should emerge with a few fudgy crumbs).

Key Ingredients

Here’s what you need to make box brownies taste homemade:

  • Butter–Boxed brownie mix typically calls for vegetable oil. Using butter is the secret to brownies that taste like they’re baked from scratch (use unsalted butter to control the salt level).
  • Espresso powder–Intensifies the chocolate flavor. I use Starbucks VIA because it dissolves easily in the brownie batter.
  • Vanilla extract–Pure vanilla extract adds rich flavor to brownies.
  • Eggs–Most brownie mixes call for one whole egg. Adding one large egg plus an extra egg yolk gives brownies an ultra fudgy texture.
  • Chocolate Chips–Even if your brownie mix contains chocolate, plan to add chocolate chips. The additional sugar from the chocolate chips creates a shiny, crackly top as the brownies bake.
  • Boxed Brownie Mix–Use your favorite brownie mix that’s approximately 18 oz (502 grams).
  • Flaky salt–Elevates every chocolate recipe! I love Maldon flaky salt.

Description

Learn how to make box brownies better! These tips elevate your favorite box mix brownies to the next level. You’ll love these fudgy, chewy brownies with crackly tops.

Ingredients

  • 6 Tbsp (84 g) unsalted butter, melted
  • 1 tsp (8 g) instant espresso powder
  • 1 1/2 tsp (6 g) vanilla extract
  • 1 large egg (50 g), at room temperature
  • 1 large egg yolk (17 g), at room temperature
  • 1 18 oz (502 g) box brownie mix
  • 1/2 cup (85 g) semisweet chocolate chips

Topping

  • flaky salt (such as Maldon)

Instructions

  1. Preheat oven to 350°F and line an 8-inch square metal baking pan with parchment paper.
  2. Make brownies:Combine melted butter, instant espresso powder, vanilla, egg, and egg yolk in a large bowl. Whisk until smooth and combined. Add box brownie mix to the bowl and fold in with a spatula just until combined and no flour streaks remain (batter will be thick). Fold in chocolate chips.
  3. Scrape brownie batter into prepared pan. Use a piece of parchment paper to press batter evenly into pan and smooth the top. Gently tap pan once to remove air bubbles.
  4. Bake brownies for 25 to 26 minutes, until the top is set and a toothpick inserted in the center comes out with a few crumbs attached. Remove from oven and place on a wire rack to cool completely. Sprinkle the tops of the brownies with flaky salt.
  5. Lift parchment and place brownies on a cutting board. Cut into squares with a sharp knife. Store leftover brownies in an airtight container at room temperature.

Notes

Boxed brownie mix: Use your favorite brownie mix that’s approximately 18 oz (502 grams). For a larger 20 oz brownie mix (567 grams), I recommend increasing the butter to 1/2 cup (112 grams).

Chocolate chips: If the box brownie mix does not include chocolate chips, add up to 1 cup (170 grams) semisweet or dark chocolate chips. If the mix includes chocolate, add at least 1/2 cup (85 g) chocolate chips.

Flaky salt: I use Maldon Sea Salt Flakes.

Peanut butter or Nutella swirl: Measure out 1/3 cup (85 grams) peanut butter or Nutella in a small bowl and microwave for 10 to 15 seconds. Dollop over the top of the brownie batter and gently swirl with a toothpick. Tap pan sharply before baking.

Bake time: May vary based on the size of your brownie mix and any swirls or additions. Start testing for doneness after 25 minutes, and continue to test every 2 minutes until a toothpick emerges with a few moist crumbs attached.

How can I improve my Betty Crocker brownie mix? ›

One change is to use milk or heavy cream instead of water. This change will make brownies more moist and gooey since milk is more fatty and flavorful than water. A second change is to use butter instead of oil. For similar reasons to using milk, butter adds a rich and more decadent quality to the batter.

What does adding an extra egg to brownie mix do? ›

If you want to get a little more creative with your brownie mix hacks, add an extra egg to the batter. The extra protein will help thicken up the batter and make it fluffier, creating a more decadent, fudgy texture. You can also add the yolk by itself in addition to the 2 eggs a box brownie mix typically calls for.

Can I use butter instead of oil in brownie mix? ›

You can absolutely substitute butter for the vegetable oil. Use the same quantity specified in the directions (for example, if it calls for 1/3 cup of oil, use 5 1/3 tablespoons of butter). Melt it down, then let it cool a bit. You might not ever go back to oil!

How do you upgrade a box of brownies? ›

Add a teaspoon of instant coffee or espresso powder. Throw in a handful of nuts—pecans, walnuts, macadamia, whatever you have on hand. Scoop in a palmful of dried or frozen fruit. Add an extra splash of the top-shelf vanilla extract, or a dab of vanilla paste, or a dash of vanilla powder, to the batter.

Why are my brownies more cakey than fudgy? ›

Achieving a fudgy brownie is all to do with the ratio of fat to flour. A fudgy brownie recipe will use more fat than flour. Generally this is achieved by adding more butter or real chocolate to your brownie recipe. A cakey brownie recipe on the other hand will call for more flour in the ratio of fat to flour.

What can you add to your brownie mix to pump up the chocolate flavor? ›

Add coffee or instant espresso powder to your brownies for an even deeper, more complex chocolate flavor. Swirl them with peanut butter, cream cheese, or even pumpkin filling to mix things up. Mix in nuts, add a marshmallow topping, or spread on your favorite frostings for fun, simple, or seasonal twists.

How to make Betty Crocker brownies more chewy? ›

Swap Fats. For a subtle upgrade, swap out the called-for vegetable oil with an equivalent amount of melted butter or coconut oil. The results are so incredibly rich and fudgy, they'll fool even the most die-hard of brownie snobs into thinking these are scratch-made.

Is it better to use milk or water in brownie mix? ›

Most brownie mixes call for water. While water does the job, you can add some extra flavor and moisture by mixing some of that water with something richer, like milk. If you want to swap it out completely, be prepared for a more chewy and fudge-like brownie from the extra fat.

What happens if you forget to put an egg in brownie mix? ›

Is it okay to make brownies without eggs? Without eggs, baked goods will become a little thinner and not rise as much in the oven. As long as you replace the moisture from the egg with milk, banana or applesauce, you can make brownies without eggs. And yes, this recipe makes thinner brownies than normal.

What is the difference between fudgy and chewy brownies? ›

Fudgy brownies are moist, dense and gooey, with almost the texture of fudge, but not quite as compact. Chewy brownies are dense (like fudgy brownies), but have a little more “bite” to them or elastic texture when you chew them.

What can I add to brownie mix instead of eggs? ›

A simple combination of water, baking powder, and vegetable oil mimics eggs almost to a T. It's a great option for cookies, quick breads, and brownies.

How do you make Betty Crocker brownies less sweet? ›

Add Salt. If you've ever found boxed brownies to be too sweet for your taste, stir a pinch of salt into the batter before baking. This'll help bring out the deeper chocolate flavors. You can even try sprinkling some flaky sea salt on top of the brownies as soon as they come out of the oven.

What can I substitute for 1/2 cup of oil in brownies? ›

Melted, unsalted butter is the perfect substitute for oil, and can even add a richer flavor to baked recipes. Swap in butter for oil in a 1:1 ratio, melting butter in the microwave or on the stovetop. Vegan butter or ghee can also work in this instance.

How do you keep brownies soft and moist? ›

Airtight Containers

How to make boxed brownies chewy? ›

Other ways to make brownies chewier
