I grew up with this meatloaf recipe. It’s just the way my mother use to make it. She made a larger version to feed the whole family which you can find here. This Mini Meatloaf is the perfect size for just the two of us or great for one person if you want some leftovers to make a meatloaf sandwich.

Meatloaf Ingredients

  • Hamburger. I used a 90/10 blend of hamburger. You can use a higher fat but if you do you will want to place your meatloaf on some kind of rack as it cooks to keep the meatloaf from sitting in a puddle of grease as it bakes. You can also use a combination of hamburger and ground pork.
  • Breadcrumbs. I like to use regular breadcrumbs or Panko crumbs but you can also use smashed saltine crackers or even bread torn into small pieces and soaked in milk.
  • Seasoning. You can get creative with your seasoning. I like to use a little ketchup, steak sauce, Italian seasoning and dried minced onion. For a more Asian flavored mini meatloaf add some teriyaki sauce and ginger.
  • Mayo. My mom always uses mayo instead of an egg for the binder in her meatloaf but you could use one egg instead if you prefer.

How to Make Mini Meatloaf

  • In a bowl, combine meat, minced onion, garlic, Italian seasoning, salt, pepper and egg or 1 Tbsp of mayo,
  • Mix to combine.
  • Add in breadcrumbs along with other seasonings including steak sauce, ketchup and Worcestershire sauce.

  • Form meatloaf into two small loaves and place in baking dish.

  • Bake meatloaf at 350 degrees F. for 25 minutes.
  • While the meatloaf is baking, combine your ingredients for your glaze.

  • Combine ketchup, brown sugar and balsamic vinegar.
  • Remove meatloaf from oven after 25 minutes and increase oven temperature to 400 degree F
  • Spoon glaze over tops and sides of meatloaf and return to 400 degree F oven for an additional 5-10 minute to allow glaze to set up.
  • Garnish with fresh chopped parsley.

Frequently Asked Questions

What percentage of fat hamburger should I use?

I use an 90/10 blend but you could also use an 80/20. Just be sure to bake your meatloaf on a rack in a pan for drainage if using a higher percentage of fat blend.

Can I use something other than hamburger?

I like to use a blend of hamburger and ground pork. You can also use ground turkey or ground chicken.

Can mini meatloaf be frozen?

Mix everything but the glaze together. Form mixture into mini loaves and then wrap individually in plastic wrap and foil. Freeze until ready to serve. Allow to thaw before baking.

Ingredients

  • 1 lb. hamburger 90/10 blend
  • 1/2 Tbsp minced onion dried
  • 2 tsp garlic minced
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 egg or 1 Tbsp mayo
  • 1/4 cup breadcrumbs
  • 1/2 tsp Italian seasoning
  • 1 Tbsp steak sauce
  • 1 Tbsp ketchup
  • 1 Tbsp Worcestershire Sauce

Meatloaf Glaze

  • 1/4 cup ketchup
  • 1 Tbsp brown sugar
  • 1/2 Tbsp balsamic vinegar

Instructions

  • In a bowl, combine meat, minced onion, garlic, Italian seasoning, salt, pepper and egg or 1 Tbsp of mayo and mix to combine.

  • Add in breadcrumbs along with other seasonings including steak sauce, ketchup and Worcestershire sauce.

  • Form meatloaf into two small loaves and place in baking dish.

  • Bake meatloaf at 350 degrees F. for 25 minutes.

  • While the meatloaf is baking combine ketchup, brown sugar and balsamic vinegar to make the glaze.

  • After 25 minutes, remove meatloaf from oven and spoon glaze over top and sides of meatloaf.

  • Then increase the oven temperature to 400 degrees F and bake for another 5- 10 minutes or until the meatloaf reaches an internal temperature of 160 degrees F and the glaze has set up.
