It was only okay as it’s written. It’s a little bland but great for “in a pinch” dinner. I’d make it again but with a little more prep; it could be really good. Definitely more seasonings, some onion, bell pepper, some squash to keep it vegetarian and/or some protein (chicken, ground beef). Cilantro sprinkled on top was delicious and adding sour cream also helped.

Delicious. The enchilada sauce added so much flavor to the rice. Added black olives on top to bake. Topped with green onions & chipotle sour cream. Definitely making it again. Thank you.

It was good! Made per recipe with addition of 1/2 c. onion and 1 Tblspn jalapeño peppers. Will make again!

Delicious! Super easy to make and simple ingredients. Added green chili’s, chicken and olives. Easy to adjust the recipe and cater to your own.

When I made this recipe, I left out the corn and bean. My children don’t eat them. I added chunks of pan seared marinated chicken leg meat and substitute the green sauce for the red. My family loved it. Will make again.

It was perfect! I adjusted the amount of cheese (more cheese of course) and put a layer of chicken on top of the rice mixture.

This dish was super easy and delish. I poached boneless chicken breasts in enchilada sauce, shredded and added to the casserole to make my meat-eater husband and grandson happy. I doubled it because my grandson who’s in law school had already asked for a to-go package to have additional meals for the week. I know I’ll be making this again. Thnx!!

Enjoyed how easy to toss together. The next time to make it even quicker and increase vegetable intake I will use cauliflower rice.

I’m lazy so I used full cans instead of measuring out cups so whole cans of sauce, beans and corn. I served diced fresh tomatoes, sour cream and quac on the side. It was a huge hit! Nothing left! Most definitely making this again!

Pretty good. I served it with tamales and threw some sour cream on top. The sweet corn and cilantro together was an amazing flavor combination, next time I will probably add more of both as the bites without those felt lacking in flavor (or maybe I didn't mix enough cheese in). It was easy and I had most of the ingredients already. Hardest part was grating he cheese, so if you buy pre-shredded it'd be even easier!I might play around with adding some different ingredients (ground beef, onion, topped with pico de gallo).
