Most of the time, people cook caramel by heating up regular or brown sugar until it turns into a smooth and creamy substance. However, you can also make caramel out of sweetened condensed milk, creating the same great sauce with a unique, extra-sweet kick.

Ingredients

  • 1 14-oz. can (396 g) sweetened, condensed milk

    1

Remove the label from the can. Only use a can of condensed milk that has a sealed lid for this method: do not use a can with a pull-tab lid.[1] There will be a fair bit of pressure building up inside the can as you boil it, and you don’t want the lid popping off.

  2. 6 Ways to Make Caramel from Sweetened Condensed Milk - wikiHow (5)

    2

Fill the saucepan with room temperature water. Make sure the can is fully immersed and that there’s an extra two inches (five cm) of water covering the can.[2] This will prevent the can from overheating and possibly exploding, and prevent the milk from burning.

    3

Place the unopened can in a medium or large saucepan. By placing the can on its side, you will prevent it from bouncing around as the water boils.

  4. 6 Ways to Make Caramel from Sweetened Condensed Milk - wikiHow (7)

    4

Bring the water to a simmer over high heat. When it begins to simmer, turn it down to medium heat and allow to simmer for two to three hours (two hours for a lighter dulce de leche, or three hours if you want the sauce thicker and darker).[3]

    • Check on the can every 30 minutes. Turn the can every half hour to prevent scorching. Top up the water as needed to ensure there’s always one to two extra inches (two-and-a-half to five cm) of water covering the can.

    5

Remove the saucepan from the heat. When two to three hours are up, remove the can with a slotted spoon or tongs and place it on a wire rack. Allow it to cool to room temperature.

    • Don’t open the can until it has fully cooled.

Method 2 of 5:

Using a Double Boiler

  1. 1

Prepare your double boiler. Fill the bottom of a double boiler with about two inches (five cm) of water and bring it to a boil. Open a can of sweetened condensed milk and pour the contents into the top portion.

    • Use a saucepan and a glass bowl if you don’t have a double boiler. Half fill a small or medium saucepan with water, and set a large glass bowl inside the saucepan, making sure it doesn't touch the water (if it does, empty out some water). Make sure the glass bowl is big enough to form a seal with the saucepan.
  2. 6 Ways to Make Caramel from Sweetened Condensed Milk - wikiHow (11)

    2

Heat the milk. Place the milk over the boiling water in the double boiler and cover with a lid. Bring it to a simmer over medium heat. Stirring occasionally, simmer for one-and-a-half to two hours, until the milk becomes thick and reaches the desired caramel color.

    • Use aluminum foil to create a lid if you are using a saucepan and glass bowl.
  3. 6 Ways to Make Caramel from Sweetened Condensed Milk - wikiHow (12)

    3

Remove from the heat. As it cools, whisk the dulce de leche until it is smooth and free of lumps. Allow it to cool for about 20 minutes before serving or using in a recipe.

  1. 6 Ways to Make Caramel from Sweetened Condensed Milk - wikiHow (14)

    1

Preheat your oven to 425 F (218 C). Open a can of sweetened condensed milk and pour the contents into a nine-inch pie plate. Cover the pie plate with foil.

  2. 6 Ways to Make Caramel from Sweetened Condensed Milk - wikiHow (15)

    2

Place the pie plate in a larger baking dish. A larger pie plate or large roasting pan will do. Add hot water to the baking dish until it comes halfway up the pie plate.

  3. 6 Ways to Make Caramel from Sweetened Condensed Milk - wikiHow (16)

    3

Bake for one hour. After an hour, remove the baking dish (with the pie plate inside) from the oven. Remove the foil and whisk the milk.[4]

    • Check the consistency and color. If the milk hasn’t achieved the desired thickness or caramel color, cover it with the foil again and return the pie plate and water-filled baking dish to the oven. Top up the water if necessary.
  4. 6 Ways to Make Caramel from Sweetened Condensed Milk - wikiHow (17)

    4

Check every 15 minutes. After the first hour, check on the confection frequently until it reaches the desired consistency and caramel color. Remove it from the oven when you are happy with the dulce de leche, or until it has achieved the color of peanut butter.[5]

  5. 6 Ways to Make Caramel from Sweetened Condensed Milk - wikiHow (18)

    5

Transfer to a mixing bowl. As the dulce de leche cools, whisk it until it’s smooth and creamy, about three minutes.

  1. 6 Ways to Make Caramel from Sweetened Condensed Milk - wikiHow (20)

    1

Prepare the can. Remove the label from the can of sweetened condensed milk. Place the unopened can on its side directly on the bottom of the pressure cooker. Fill the pressure cooker with enough water to fully immerse the can and cover it with an extra inch (two-and-a-half cm) of water.[6]

    • Do not exceed the maximum fill line on your pressure cooker.
  2. 6 Ways to Make Caramel from Sweetened Condensed Milk - wikiHow (21)

    2

Secure (lock) the lid and heat. Heat on high until the pressure cooker reaches the proper pressure. Immediately lower the heat slightly, but keep the temperature high enough that the pressure cooker maintains pressure.

    • You want the heat high enough to simmer the water, but not so high that the pressure cooker whistles.
  3. 6 Ways to Make Caramel from Sweetened Condensed Milk - wikiHow (22)

    3

Continue cooking for 40 minutes. When the 40 minutes are up, remove the pressure cooker from the heat.[7]

  4. 6 Ways to Make Caramel from Sweetened Condensed Milk - wikiHow (23)

    4

Release the pressure. Allow the pressure cooker to naturally release its steam and reduce its pressure, or with the quick release valve. Do not open the pressure cooker until all the steam has been released and the pressure has dropped.

  5. 6 Ways to Make Caramel from Sweetened Condensed Milk - wikiHow (24)

    5

Open the pressure cooker and remove the can. Use tongs or a slotted spoon to remove the can from the water and place it on a wire rack. Allow it to cool to room temperature, and don’t open the can until it has.

  2. 6 Ways to Make Caramel from Sweetened Condensed Milk - wikiHow (27)

    2

Heat on low for eight to 10 hours. For a lighter dulce de leche, cook for eight hours; for a thicker and darker sauce, heat for ten hours.[8]

  3. 6 Ways to Make Caramel from Sweetened Condensed Milk - wikiHow (28)

    3

Turn off the slow cooker and remove the can. Use tongs or a slotted spoon. Allow the can to cool on a wire rack to room temperature before opening.[9]

Can I make two cans at the same time? Does the cooking time increase?

6 Ways to Make Caramel from Sweetened Condensed Milk - wikiHow (30)

    Community Answer

You can make two cans at once, but it may take longer to get to a simmer. After that, the same time counts as they will both be the same temperature. This applies to as many cans as you can fit in any particular vessel.

6 Ways to Make Caramel from Sweetened Condensed Milk - wikiHow (2024)

      FAQs

Does boiling condensed milk turn into caramel? ›

As heat is applied, the sugar naturally caramelizes. Because the milk is boiled inside its can, there's no need to worry about it becoming too thick or scorched as the moisture cannot evaporate. There's no need to use a candy thermometer or to tend the pot constantly.

What is the trick to making caramel? ›

“It's best to start a wet caramel over low heat until the sugar has dissolved, then increase the heat to medium for caramelization,” says Mel. “As the water evaporates, the sugar eventually caramelizes.” The wet method is used to take the caramel to various stages, including soft ball, firm ball, hard ball, etc.

What is the dry vs wet method for caramel? ›

According to Fine Cooking, caramel can be made using either a dry or wet method: Dry: White granulated sugar is placed over a medium-high heat and cooked until it turns liquid and becomes golden brown. Wet: Water is added to the pan, which allows the sugar to cook longer and develop better flavors.

Which method is quickest in caramel making? ›

For the "dry" caramel method, you simply heat the sugar in an empty pan until melted and caramelized. It's quick and direct, but the risk is that some parts of the sugar melt faster than others, and can burn before the rest had made it even to light amber.

How do you know when condensed milk has turned to caramel? ›

Pour one can of sweetened condensed milk into a casserole dish or pie plate. Cover with foil. Bake 60-90 minutes or until condensed milk has reached a golden brown color.

What are the two methods for making caramel? ›

What Are The Two Methods for Making Caramel? Wet vs. Dry Caramel
      1. Wet caramel is the most common method for making caramel at home. ...
      2. Dry caramel is the more challenging method. ...
      3. Be prepared. ...
      4. Use a light-colored pot. ...
      5. Add corn syrup. ...
      6. Don't mix. ...
      7. Warm the cream. ...
      8. Keep your butter cold.
      Mar 24, 2023

Should I stir when making caramel? ›

Do not stir, but instead swirl and shake the pan to distribute the caramelized sugar in and around the unmelted sugar and to promote even browning. Watch it carefully to make sure it doesn't burn. The caramel is done when it's a deep amber color and all sugar lumps have dissolved.

Why is my homemade caramel so hard? ›

This is usually caused by sugar crystals stuck to the side of the pan that didn't get fully dissolved. It only takes one to set off a chain reaction, and before you know it you have crunchy caramel.

Is caramel better with white or brown sugar? ›

The best caramel starts with regular granulated sugar. This refined white sugar is made from sugarcane or sugar beets, and it melts more evenly than unrefined sugars. Some recipes call for brown sugar as a shortcut because its dark color looks like caramel as soon as it melts.

Why does sugar clump when making caramel? ›

The sugar crystals have jagged edges and, even after liquefying, want to regroup into a solid mass. Stirring a wet caramel encourages these crystals to hook up—and cause clumping.

Is it safe to boil a can of condensed milk? ›

Is it safe to boil my can of sweetened condensed milk to make caramel sauce? No. For safety reasons, we do not recommend heating a can of our condensed milk, opened or unopened. The current can is not designed to withstand high temperatures.

How long does it take to whip condensed milk? ›

If you are using a stand mixer put that mixing bowl and the beaters in the fridge. Pour chilled evaporated milk into the mixing bowl and beat at high speed for 1 minute, or until foamy.

Why is my condensed milk caramel not thickening? ›

Too short of a cooling time: Caramel sauce thickens significantly as it cools, so let the caramel cool for the appropriate time to achieve the right thickness. If the sauce is still too thin after cooling completely, place it back on the stovetop and reheat it on low heat for a few additional minutes.
